The Mutton Wine list

So how does this all work then?

Well, we’ve not listed the wines in price order, but stylistically from the lightest, purest, most
delicate through medium weight and richer all the way down to hearty, full, robust and complex.

Not to deceive you, but…

This way you’ll find little clusters of similar grape varieties, so if you see something
you know and like, you might try it, but you could also try something you’ve not
tried before in the knowledge that it’s a close companion to something familiar,
how else are you otherwise going to have Melagousia or a Mavroudi?

Some organic, some biodynamic, all sustainably grown.

Happy drinking.

BEER, ALES & CIDER

A contemporary beer goggle tuition.

Here’s a brief summary so when you share bar stool company with the other side you’ve got some conversational currency to help you get along.

ALE – TOP FERMENTED BEER

Generally a fast process where active yeasts ferment at the top of the liquid at high temperatures that creates a complex, slightly fruity, mild spice, and is dark in appearance, intense and bitter – hence the term… bitter.

MASCULINE
Needs careful handling, can be volatile, which you might not see coming. Have beards, long hair, dog loving, can be short tempered now that pipes have been band. Deep and thoughtful, know their subjects.

Like rugby, rambling, but generally not both, folk music, history, and the evolution of Magic Roundabout from a Children’s television program to the road layout in Swindon. Will honestly tell you where you sit in their lives, either a massive hug or a breathless squeeze.

FEMININE
All of the above, but somehow beguilingly sexy – refer to point 1

LAGER – BOTTOM FERMENTED BEER

Longer slower process of fermentation produces a lighter clear beer that originated in Bavaria where the yeasts need to be resilient to very cold winters.

MASCULINE
Needs careful handling, can be volatile, you can see it coming with flags and chants. Are varied, if they have beards, it’ll come with a shaven head, checked shirts, a top-quality blazer, socks and maybe no socks. Know a little about everything, are easily distracted.

Like football, won’t admit to rambling, like whatever you like, then disagree in your absence. That said there are some genius’s out there that are well worth looking for.

FEMININE
The absolute antithesis of the above, and of course beguilingly sexy.

Good luck in your conversations – please let us know if this is of any help.

Don’t be bitter.

The interaction of bitters on our taste buds induces the secretion of a hunger inducing hormone in the stomach, called ghrelin, which causes a short-term sense of hunger, usually within 30 minutes of consuming the bitters. Then like Pavlov’s dogs you got to eat.
